Foam shoe insert
At the last minute, I installed the tape switches into a foam shoe insert. They were working between the tap and the leather, but I realized that the sound of the tap was to weak and I couldn't accept the quality of the sounds even for a prototype because the tap had to be slightly loose in order to register movement. To my shock, the switches work just fine inside the shoe, which is great. (Tapeswitch sales rep claimed that they wouldn't work without a solid, flat backing. Not true.)
Using a foam shoe insert is a better design anyway, because people will not have to modify their tap shoes, and they can use it for other types of shoes, like flamenco, clogs, etc.
The chip and the battery will still have to live in an exterior project box for now. And microphones would of course need to be on the exterior part of the shoe, if added later.
